Ferrero Rocher Cookies

I have previously said that Twix is my favourite chocolate bar. But then I also said Snickers is……I changed my mind Ferrero Rocher is definitely my favourite. I don’t even know if it counts as a chocolate bar to be honest but anyway FERRERO ROCHER COOKIES ??? They get a 10/10 from me, the hazelnut chocolate on top made the regular degular cookie taste so good!!

Ferrero Rocher Cookies

Ferrero Rocher Cookies

Ingredients
Makes: 6

  • for the cookies:
  • some nutella

  • 120g butter

  • 100g brown sugar

  • 100g granulated sugar

  • 2 tsp vanilla extract

  • 1 egg

  • 230g plain flour

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • for the chocolate topping:
  • 100g dark chocolate
    (any chocolate works, i prefer dark)

  • 70g finely chopped hazelnuts

Directions

  • cookies:
  • start by freezing your nutella, so place 6 tablespoon sized dollops of nutella onto a tray. put this tray in your freezer whiles you make the cookie dough
  • to make the cookie dough, add the butter into a pot and place this over medium-low heat
  • keep heating this, whiles stirring at the same time, until the butter becomes a light brown colour. take this off the heat and leave it too cool for 5 minutes
  • once the butter has cooled, pour it into a large bowl and whisk in both sugars and the vanilla. then mix in the egg
  • in a separate smaller bowl, mix together the flour, salt, baking powder and baking soda
  • add this flour mixture into the large bowl and mix until a dough forms and no flour is visible
  • to make the cookie dough balls, get 90g of the dough, flatten it out then add a piece of the frozen nutella on top. then roll the dough into a ball making sure no nutella is showing through
  • do this until you've used all the dough, then add the dough balls onto a tray and leave them in the fridge for 30 minutes
  • at this point pre-heat your oven to 190c/375f
  • once the dough balls have chilled, add them onto a large baking paper lined tray, making sure to leave a gap between each one
  • bake for around 20 minutes then leave them to cool completely
  • chocolate topping:
  • melt the chocolate then mix in the chopped hazelnuts
  • add about a tablespoon of this onto each cookie and spread it out, i just did this with a spoon
  • leave these for a bit so the chocolate can set and then that's it, you're done!

Notes

  • for the chocolate topping, if you know how to temper chocolate i would recommend doing that. the chocolate will set much quicker and a lot better. i don't know how to temper, also it seems like a lot of work so i didn't but if you know how to, you should!
