Frosted Sugar Cookies

I’m always seeing pictures of these pink frosted sugar cookies that you can get in America and I’ve always wanted to try them but we don’t have them in the UK. I feel like sugar cookies in general are under appreciated here, I don’t be seeing people eat sugar cookies. I don’t even know where I would buy a sugar cookie from but sugar cookies are great, I love them.

Anyway, I wanted to try recreating them. Do these taste the same as the ones you can buy……I have no idea I’ve never tried them but probably not. Either way, I still loved the way they turned out, I don’t normally like icing on cookies but these were so good!!

Frosted Sugar Cookies

Ingredients
Makes: 6 cookies

  • for the cookies:
  • 120g soft unsalted butter

  • 90g granulated sugar

  • 2 tsp vanilla extract

  • 1 egg

  • 240g plain flour

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • for the icing:
  • 150g soft unsalted butter

  • 260g condensed milk

  • 2 tsp vanilla extract

  • plus some pink food colouring and sprinkles

Directions

  • cookies:
  • start by beating the butter, sugar and vanilla together for 5 minutes
  • now add the egg and mix this in
  • in a separate bowl mix together the flour, salt and baking powder. add this into the other bowl and mix just until a dough forms
  • wrap the dough with some cling film then leave this to chill in the fridge for 30 minutes
  • at this point also pre-heat your oven to 180c/350f
  • once the dough has chilled. dust your counter with some icing sugar or flour, add the dough on top of this and roll it out
  • the softness of the cookie depends on how thin you roll out the dough, a thicker dough will give you a softer cookie. i like to roll mine out until it's 1cm thick, i feel like that gives a good softness
  • cut out whatever sizes and shapes you want, i used a 8cm round cookie cutter for mine
  • add these onto a baking paper lined tray, making sure to leave a gap between each one and then bake them for around 15-18 minutes. they're done when the edges of them just start to turn slightly brown
  • icing:
  • whip the butter for 5 minutes, you want it to lighten in colour
  • add in the condensed milk and whip until you get a smooth icing. if it happens to split just keep whipping it and it will come together
  • now just mix in the vanilla
  • add the icing on to the completely cooled cookies, smooth it out a little, add some sprinkles and then you're done!
