Nashville Chicken Burgers

Fried chicken burgers are one of my favourite things to cook, THEY ALWAYS TASTE SO GOOD and they’re pretty easy to make too.

I would say a good fried chicken burger is my go to comfort food.

So today I wanted to make some, so I made Nashville chicken burgers.

Nashville Chicken

I used to always see videos of Nashville fried chicken and I never knew what the difference was between Nashville chicken and other kinds of fried chicken.

I have now learnt woohoo.

From what I’ve seen, I would say the main difference is the flavour.

The main seasonings that are used in Nashville chicken are salt, cayenne pepper, paprika, brown sugar (I don’t know if this is considered a seasoning but I’m including it here), garlic powder and onion powder.

And then after the chicken has been fried, it is dipped in a spicy oil, that is made with the same seasonings.

You end up with fried chicken that is crispy, spicy and it has a slight sweetness to it.

It is very good, I love it.

With that being said, I don’t how authentic my Nashville chicken is, this recipe is just my take on it.

The chicken 

For these burgers, I used boneless chicken thighs.

I usually do prefer using chicken breasts, but I used thighs instead today.

However, use whichever you prefer, both work great so use your favourite.

The seasonings

In the recipe card below, I’ve included measurements for the seasonings I used.

I wanted to mention, you don’t need to follow these measurements exactly.

If you want to make your chicken spicier, use more seasonings, or if you want them to be less spicy, use less.

Make the chicken to your taste.

Frying the chicken

Once we have seasoned the chicken and coated it, we can move onto frying it.

You want to fry this in oil that is around 160-170c. Any flavourless oil will work, but I used vegetable oil.

The time it takes for your chicken to cook will vary depending on the size and thickness of it.

It took around 8 minutes for my chicken to cook, but it might take less time or more time for you.

How to know if the oil is ready without a thermometer 

If you don’t have a thermometer THIS IS OK.

The best way to check if your oil is ready is to cut a small piece of your chicken, then place this into your oil.

If the chicken starts gently bubbling, the oil is ready. You can start frying. 

If the chicken doesn’t start bubbling, the oil is not ready, let it heat up for longer.

BUT if the chicken starts aggressively bubbling, your oil is too hot. Lower the heat, or turn it off, and let the oil cool down a bit.

You want your chicken to be gently bubbling throughout the whole frying process.

The dipping oil

Once the chicken has been fried, we are going to dip this into an oil mixture.

Like I mentioned, this is just a bunch of seasonings and oil, that have been mixed together.

You want to use the same oil that you fried the chicken in.


This is very important, if the oil is cold, it will soak into the fried chicken which will make it taste soggy and greasy.

We do not want this. We just want the oil to coat the outside.

So make sure the oil is hot. If you feel like it has cooled down too much by the time you have gotten to this step, just place the oil back onto your heat and let it get hot again.

We’re going to use about a cup of this oil, mix this into your seasonings and then dip the chicken into this.

You don’t want to leave the chicken to soak into the oil, just do a quick dip on both sides, then place the chicken onto a wire rack

I also brushed some extra oil onto the chicken before assembling my burgers, but this is optional.

Assembling the burgers

I used toasted brioche buns for my burgers, then I filled them with the chicken, spicy mayo and lettuce.

From what I’ve seen, Nashville chicken burgers do typically have coleslaw in them and also pickles.

I made my burgers the way I like them, so I just added lettuce. But you can add whatever you want to them.

And nowwww they are finally done, you can dig in!

Makes: 4

  • 4 boneless chicken thighs (breasts work too, use whichever you prefer)

  • 2 tablespoons olive oil

  • 2 teaspoons salt

  • 2 teaspoons cayenne pepper

  • 2 teaspoons chilli powder

  • 2 teaspoons paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon chilli flakes

  • 1/2 teaspoon white pepper

  • For the coating:
  • 250 g corn flour

  • 250 g plain flour

  • 2 teaspoons salt

  • 2 teaspoons cayenne pepper

  • 2 teaspoons chilli powder

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Plus some water

  • For the dipping oil:
  • 1 tablespoon cayenne pepper

  • 1 tablespoon paprika

  • 2 teaspoons brown sugar

  • 2 teaspoons chilli powder

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon white pepper

  • 1/2 teaspoon salt

  • 1 cup hot oil, around 240ml (use the oil that you fried the chicken in)

  • Extras:
  • Vegetable oil, to fry

  • Plus burger buns, any sauce you want and lettuce


  • Place your chicken into a bowl, along with the olive oil and all the seasonings. Mix all this together, then leave this in your fridge to marinate for an hour. I actually didn't leave it to marinate, but it is better if you do.
  • Coating the chicken:
  • In a large bowl, add the corn flour, plain flour and the seasonings. Whisk these together.
  • Get half of this flour mixture and place it into a separate large bowl.
  • Pour some water into this and whisk this in. You want to end up with a batter that is thin, but thick enough to coat the chicken. Keep adding water until you reach this consistency.
  • Get one of your chicken thighs and dip this into the wet batter, then let any excess batter drip off.
  • Dip this into the flour mixture, make sure to firmly press the flour onto the chicken so that it sticks. Shake off any excess flour then leave this on a tray.
  • Repeat until you have coated all of your chicken.
  • Frying the chicken:
  • You want to fry your chicken in oil that is around 160 - 170c.
  • Fry them until cooked, this took around 8 minutes for me, but this will depend on the size and thickness of your chicken.
  • Once cooked, leave on a wire rack so that the excess oil can drip off.
  • The dipping oil:
  • In a bowl, add the seasoning for the dipping oil, then get 1 cup of oil that you fried the chicken in. MAKE SURE THIS OIL IS HOT, if it's too cold, your chicken will end up soggy and greasy.
  • Mix this oil into the seasonings.
  • Dip your fried chicken into this, then place them back onto your wire rack.
  • Now you can assemble your burgers, I used toasted brioche buns, some spicy mayo, the chicken and lettuce.
  • Enjoy!
