Strawberry Cheesecake Cookies

These cookies were inspired by Crumbl Cookies, at the time they were selling a cookie like this and as soon as I saw it I knew I had to try it. I’m also convinced that these are what started my cookie obsession, I made them almost a year ago and I’m still constantly thinking about them.

Strawberry Cheesecake Cookies

Ingredients

  • for the cookies:
  • 110g unsalted butter

  • 1/2 tsp instant coffee
    (optional)

  • 50g cocoa powder

  • 150g sugar

  • 50g brown sugar

  • 2 eggs

  • 200g plain flour

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 1/4 tsp baking powder

  • for the cheesecake part:
  • 220g cream cheese

  • 150ml double cream

  • 200g granulated sugar

  • 1 tsp vanilla extract

  • 4 tsp freeze dried strawberry powder

Directions

  • cookies:
  • start by pre-heating your oven to 180c/350f
  • melt the butter, then whiles it's still warm mix in the coffee
  • pour this into a large bowl and mix in the cocoa powder until it's all dissolved
  • whisk in both sugar into this, then add the eggs
  • in a separate bowl, mix together the flour, salt, baking soda and baking powder
  • add this into the other bowl and fold everything together until a dough forms
  • using a large ice cream scoop, or a spoon, scoop out mounds of cookie dough (mine were around 90g each) onto a large tray. make sure to leave a gap for them to spread
  • bake these for 18 - 20 minutes, then leave them to cool completely
  • cheesecake part:
  • add your cream cheese into a small bowl and mix it until it's smooth. leave this aside
  • add the cream, sugar and vanilla into a large bowl and whisk just until it starts to thicken
  • add the cream cheese into this, then mix until the mixture is thick
  • now mix in the strawberry powder
  • pipe this onto the cooled cookies, smooth it out a little, then decorate however you want. i just drizzled some melted chocolate on top but that's pretty much it!

Notes

  • i made the cheesecake part to taste, it's easily adjustable. so if you want it to be sweeter, add more sugar or even some honey. or you can also add more strawberry powder if you want a stronger flavour. it's completely up to you!
