I don’t know if these would be considered double or triple chocolate cookies. I’m gonna call them triple because I think that sounds better but anyway these are pretty simple cookies. There’s nothing extra added to them, no icing, no decoration but I think they’re one of my favourites. But also I say that about every recipe so I don’t know if I’m a reliable source. Enjoy!

Triple Chocolate Cookies
Ingredients
110g unsalted butter
1/2 tsp instant coffee
50g cocoa powder
150g granulated sugar
50g brown sugar
2 eggs
200g plain flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
100g dark chocolate
(chopped)100g white chocolate
(chopped)
Directions
- start by pre-heating your oven to 180c/350f
- melt the butter then whiles it's still warm, pour it into a large bowl and mix in the coffee
- once the coffee has dissolved, whisk in the cocoa powder
- now whisk in both sugar. once the mixture is smooth, add in the 2 eggs
- in a smaller bowl, mix together the flour, salt, baking soda and baking powder
- add this into the large bowl and mix until a dough forms
- now just fold in both chocolates
- using an ice cream scoop, scoop out mounds of the cookie dough. each one of my cookie dough balls were around 85g
- add these onto a large baking paper lined tray, making sure to leave a gap between cookie so that they can spread
- bake for 18 - 20 minutes and that's it!
Notes
- the instant coffee doesn't make these taste like coffee, it's just there to enhance the chocolate flavour but if you want, you can leave it out.
