Triple Chocolate Cookies

I don’t know if these would be considered double or triple chocolate cookies. I’m gonna call them triple because I think that sounds better but anyway these are pretty simple cookies. There’s nothing extra added to them, no icing, no decoration but I think they’re one of my favourites. But also I say that about every recipe so I don’t know if I’m a reliable source. Enjoy!

Triple Chocolate Cookies

Ingredients

  • 110g unsalted butter

  • 1/2 tsp instant coffee

  • 50g cocoa powder

  • 150g granulated sugar

  • 50g brown sugar

  • 2 eggs

  • 200g plain flour

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 100g dark chocolate
    (chopped)

  • 100g white chocolate
    (chopped)

Directions

  • start by pre-heating your oven to 180c/350f
  • melt the butter then whiles it's still warm, pour it into a large bowl and mix in the coffee
  • once the coffee has dissolved, whisk in the cocoa powder
  • now whisk in both sugar. once the mixture is smooth, add in the 2 eggs
  • in a smaller bowl, mix together the flour, salt, baking soda and baking powder
  • add this into the large bowl and mix until a dough forms
  • now just fold in both chocolates
  • using an ice cream scoop, scoop out mounds of the cookie dough. each one of my cookie dough balls were around 85g
  • add these onto a large baking paper lined tray, making sure to leave a gap between cookie so that they can spread
  • bake for 18 - 20 minutes and that's it!

Notes

  • the instant coffee doesn't make these taste like coffee, it's just there to enhance the chocolate flavour but if you want, you can leave it out.
